Baking Quest: Phyllo & Hotdog Buns

Mushrooms, mushrooms, chicken franks, and more mushrooms. If you don't already know, this girl right here is a mushroom lover. With the exception of those icky yellow-brown button mushrooms in a can (not straw mushrooms - they're lovely, especially in hor fun).

Cream of mushroom soup is regularly seen on menus or paired with lunch/dinner sets. "Soup of the Day" some might call it. Where ever I dine at, if they're serving mushroom soup, I almost always get it - key word: almost. Just cause I love mushrooms / mushroom soup, does not mean that I'll drink every version of cream of mushroom. I, for one, refuse to drink Pastamania's cream of mushroom. Tried several times, but even with such a small serving, I could never get past the 5th spoonful. Eurgh!

Enough talk, no amount of text can cover for my poor phyllo/ filo/ fillo craft. *sigh*

The sole redeeming part is the filling. Ever since Aunt Cath starting living with my family, I've had to do some food magic. No dairy products and everything has to be thoroughly cooked. All you need for the mushroom filling is.. you've guessed it, mushrooms! Ha. I used fresh shiitake mushrooms bought from the wet market. Slice & dice them into teeny pieces (any ideas on how to mince up mushroom quick? going thru 6 small mushrooms makes me weep), plus an onion (a puny one cause I don't fancy onions but I simply cannot deny their flavor & fragrance). Using a non-stick pan (I forgot about oil), cook the onions till mostly translucent (without burning) and then throw in the mushrooms and some water. Pepper it and mix it up a little before covering the pan for a few mins. & voilà, you have yourself some.. uhhh.. mushroom paste? *grins*

Next up is my first attempt at white bread. Ever since I ventured into bread baking, I've been putting wholemeal flour into anything that has a very forgiving recipe.

White bread hotdog buns! I didn't find the bread special, but my aunts really liked it.. Regardless, it was über fun making these. Now, if only hotdogs/ chicken franks weren't so unhealthy (what? it's processed & there's penises, even anuses in the mix). Maybe I'll use vege sausage instead?
