The other day, I had this grand idea of making biscotti for a change. Instead of the usual oatmeal currant cookies, I thought a plain almond biscotti would be nice. Especially when I want to dunk my snack in a cup of hot milo. mmm.. yummy!
& off I go, merrily diving into my first attempt at biscotti..

.. only to emerge crestfallen.
The biscotti batter turned out rather runny and.. sticky? I don't know.. after the chopped almonds were added, I had to turn the batter out onto a baking sheet and form it into a log. As seen in the pictures, the log looked really odd. It didn't even look baked after I sliced it. Although, I did forget to split the batter into 2 logs instead of 1.. heh. (^ ^ ;)ゞ
I posted a photo of my first biscotti attempt on instagram with the caption "Attempt at making #almond #biscotti & it doesnt quite look right.. hmm.. *raises an eyebrow*". And also a photo of the final result of the almond biscotti on facebook. To which, my friends encouraged me not to give up.
Thus, I dived into the second attempt 2 to 3 hours later. This time, I reduced the amount of almonds & tripled checked that I was following the recipe.

Looking good eh.. Haha! The almond biscotti didn't turn out the way I thought it'd be, but it was a good second attempt all in all. I would credit the success to my Grams! She had fun mixing the batter & she did it very well. She's a rather meticulous person you see. So I'm guessing the almond biscotti succeeded simply because of the amount of love my Grams poured into it. *grins*
